Sprouted Moong Salad

sprouted moong salad is very colorful  and nutritious dish. It is a dish good source of proteins and calcium. it can be served as a light lunch,dinner or breakfast and it is very easy to prepare.
Ingredients:
  •     Sprouted moong-1cup
  •     Chopped tomatoes-1/2 cup
  •     Chopped onions- ½ cup
  •     Chopped cucumber-1/2 cup
  •     Coconut(grated) -1tbsp
  •     Chopped coriander -1tbsp
  •     Mustard seed-1/2 tsp
  •     Salt to taste 
  •    Curry leaves- 5-6
 preparation:
         Cook  sprouted moong in  a saucepan with little water and salt for 6-7 minute,
         Drain extra water.
         Heat oil in pan, add mustard seed as they crack then add curry leaves, green Chilli.coconut
         Now add boiled sprouted moong stir gently for 1-2 minutes.  Turn off the heat.
     Take serving plate add moong,cucumber,onions,tomato, mix it properly.
     garnish with chopped coriander leaves.
     Enjoy your nutritious moong salad.

Cabbage Carrot Salad

A colorful combination of cabbage and carrot salad makes more delicious and nutritious. Cabbage is rich in nutrients and carrot contain vitamin A. so enjoy this wonderful and healthy Salad as side dish with rice and chapati
 Ingredients: 
  • Cabbage-1cup(finely chopped)
  • Carrot-1cup 
  • Coconut-1/2cup shreded
  • Green chilli-2 
  • Cumin seed-1/4 tsp 
  • Mustard seed-1/4 tsp 
  • Turmeric Powder-1/4 tsp
  •  Salt to taste
  •  Oil-2tsp 
  •  Coriander leaves- for garnishing 
Preparation: 
Heat oil in pan add mustard seed, cumin seed when they crackle
Add green Chilli sauté for few minutes add turmeric powder,
give nice stir add cabbage and carrot mix it well cook for 4-5 minutes.
add coconut and salt cook for another 2 minutes. Turn off the heat
and garnish with coriander leaves.
Enjoy your crunchy and healthy salad with rice or chapati
