Tahari(Rice Recipe)


This is one of my and my hubby’s favorite rice dish.my mom-in-law
Taught me this simple rice dish and can be make without much effort.
You can add other veggies of your choice like potato,peas,carrots etc.
 


ingridents:
  • Rice-1cup
  • Cauliflower (florets)-1/2 cup
  • Onion -1cut into slices
  • Cumin seed-1/4 tsp
  • Mustard seed-1/4 tsp 
  • Fenugreek( Methi) seed-1/4tsp
  • Asafetida (hing)-pinch
  • Turmeric powder-1/2tsp
  • Tamarind pulp-1tbsp
  • oil-1tbsp
For Ground Masala:
  •  Methi (Fenugreek seed)-8-10 seeds
  • Whole coriander seed-1tbsp
  • chana dal(gram dal)-1tbsp
  • whole red chilli-2
preparation:

First dry roast coriander seed,chana dal, methi and dry red Chilli.
Roast till nice fragrant comes.
Once they cool, grind coarse grind.
Wash rice and drain the water and keep aside.
Heat oil in pressure cooker add mustard seed, cumin seed,hing sauté for few seconds.
Add onions and cook till turn little golden brown.
Add cauliflower and turmeric powder, salt and mix it well.
Now add washed rice and coarsely ground masala cook for 1-2 minutes.
Add 2cups of water and tamarind pulp. Once its start boiling give a nice
Stir otherwise veggie and rice will stuck in the bottom.
Close the lid of the pressure cooker and cook till one whistle comes.
Turn off the heat. Let the pressure go on by itself.
Garnish with coriander leaves. Serve hot with any raita.

Gulab jamun with milk powder

i prepared these gulab jamun on holi. here in US we don't get khova(mava) ,
as we get in India. so i tried these from milk powder. it turned out almost like mava one.
Ingredients:
  • Milk powder-1cup
  • Maida-2tbsp
  • Rava (semolina)-2tbsp
  • Cream -3tbsp
  • Ghee-4 tbsp
  • Baking powder-a pinch
  • Sugar-1 cup
  • Water-1cup
  • Cardamom powder-1/4tsp
  • Coconut flakes –for garnishing
  • Oil or ghee for frying
Preparation:
Mix all the dry ingredients milk powder, Maida, rava and baking powder nicely.
Now add cream and melted ghee little by little and kneads soft and smooth dough.
Cover it with paper towel for 20- 30 minutes.
In the meantime mix the sugar and water boil it till sugar dissolve completely
And simmer for 5 minutes. Add cardamom powder into the syrup and keep aside.
Make a small size of balls out of the dough. Make sure there are no cracks into ball.
Heat oil on medium flame and fry the balls till golden brown. Now add them sugar syrup.
Rest them for half an hour in sugar syrup.
Serve it with coconut flakes on top.

Mint cucumber raita

Cucumber mint raita is simplest and yummiest raita.it Tastes good with biryani or any rice dish.

Ingredients:
      Cucumber-1/2cup grated
      Mint leaves-1tbsp (finely chopped)
      Black salt-a pinch
      Roasted cumin powder-1/4 tsp 
      Salt to taste  


        Preparation:
        Beat the curd add cumin powder, black salt, salt mix it well.
        Add grated cucumber and finely chopped mint mix it properly.
        Serve with any biryani, any rice dish.
        Enjoy!!!

        Eggless Almond cookies

        Egg less Almond cookie are easy to make and Taste is so yummy. Have these cookies with nice cup of tea.I hope you’ll enjoy them as well.

        Ingredients:

        •        All Purpose flour-2 cup
        •        Sugar- 1 cup      
        •        Almond- 1 cup
        •        Purified butter (ghee) or butter-1 cup(melted)
        •        Milk-2 tbsp.
        •        Baking powder-1 tsp
        Preparation:
        1.       Preheat the oven to 180 c (350 f)
        2.          Soak the half almonds in Luke warm water for half an hour.
        3.          After Half an hour cut the  almonds into long two pieces
        4.          Grind rest of them.
        5.          Beat the melted Ghee or butter and sugar in mixing bowl until light.
        6.         Add maida and baking powder into the mixture and mix well. 
        7.          Now add ground almonds and milk into the mixture . knead lightly to make dough.
        8.          Divide that into equal size balls keep it between your palms and press it with light hands.
        9.         Put the half chopped almonds at center of the cookies. 
        10.         Arrange them two inches apart in a baking tray because their size increases on getting     baked.
        11.         Put it in oven and let it bake for 15-20 minutes or until golden brown.
        12.         Cool on racks and serve.
        13.         Delicious almond cookies are perfect for tea or just for enjoying whenever you’d like.
